Earlier, when we came across news reports that a noodle factory will be built in Benguet to produce vegetable noodles, we wondered how vegetables — particularly the green, leafy ones — can be turned into noodles. Well, the folks at Benguet State University proved that you can make noodles out of squash as you can see in this Inquirer interview with Dr. Violeta Salda of BSU’s Vegetable Processing Center. I suppose this is a good project because it opens a market for squash farmers.
Have you tasted them yet? I am wondering if they taste like vegetables as well.

I’ve also seen some whole wheat spaghetti noodles around now. They’re supposed to be healthier than regular noodles.
Great innovation! Flavored noodles are very good and healthy for you. We’ve had some that are made with spinach and carrots but haven’t tasted one with squash yet. I am curious to know what it tastes like. How great that it’s produced in Benguet!

it’s a community program in cagayan province. at least we don’t have to import wheat to make noodles (or do we still use wheat ingredients to make those noodles?) and make noodles from local food resources we have.
